Easy Frittata #CookingwithJens

Ingredients:

-Filling


15ml oil

1/3 stalk celery, chopped
1/4 onion, finely chopped
15ml grated carrots
1/6 zucchini, slice thinly
*optional: any other vegetables of your choice

-Egg mixture


1ml salt

pinch of black pepper
25ml water
2 eggs

-Topping


25ml grated cheese

2 stems parsley, finely chopped

Instructions:


1. Preheat oven to 375F°.


2. Wash and prepare all vegetables in the "FIlling" Category. Saute in a small frying pan with oil using medium heat until tender.


3. In a small bowl, whisk together all the ingredients in the "Egg mixture" section.


4. Pour egg mixture into the saute mixture into the frying pan. (DO NOT STIR)


5. Sprinkle grated cheese and chopped parsley on top of the egg mixture.


6. Place frying pan into the oven


7. Bake for 20-25 minutes or when the center of frittata do not jiggle.


8. Remove frying pan from oven.


9. ENJOY!
